This was a article plus recipes I wrote on how to utilize end of season harvest vegetables. I focused on beets and how they can be pickled and turned into a great multi-use item in your pantry or fridge all winter long. I have a pickling recipe, sandwich recipe to use the pickled beets, and a cocktail utilizing the pickled beet juice! It was a fun project to work on!
